White Cloud Coffee brings Melbourne Brunch Scene to Brighton

Globe-trotting Aussie chef Sean Brailsford has taken over the kitchen at White Cloud Coffee in Circus Street, serving delicious brunches and homemade goodies to eat in or take away.

“I want to bring some of the best things about the buzzy Melbourne brunch scene to this lovely spot in Brighton, creating traditional brunch dishes with a twist, as well as tasty light meals throughout the day,” said Sean Brailsford, chef at The Pantry inside White Cloud Coffee, Circus Street.

Dishes will include smashed avocado on toast with harissa, corn fritters with fried eggs and fennel, fried chicken crumpets hollandaise, as well as tasty sandwiches, sausage rolls, pastries and cakes.

Everything on the menu will be made fresh in The Pantry kitchen, using local ingredients where possible, including bread from Brighton’s Flour Pot Bakery, and ham, bacon, sausages and patties from the Brighton Sausage Company, who use meat from local farms.

Sean Brailsford will bring his experience of working in great cafes in Melbourne, Paris, Tipperary, Brighton, Worthing and the Algarve to White Cloud Coffee’s flagship café in Brighton, which overlooks the new Market Square and the Dance Space outdoor performance area at Circus Street.

“We are delighted to welcome Sean to our flagship cafe at the award winning Circus Street development in the heart of Brighton and I am excited to be able to add to the culture of the city I grew up in by giving Sean’s global experience a platform,” said Phil Grundy, co-director of White Cloud.

“We warmly encourage local residents, visitors and the dancers and artists who surround this lovely new square in Brighton to come and enjoy our delicious breakfast, brunch and lunch.”

“White Cloud Coffee is an important cornerstone of the new community here, and we are delighted that they are extending their food offer to help create a joyful atmosphere here in Circus Street,” said Rob Sloper, from U+I, a Landsec company, developers behind the new Circus Street cultural quarter.
